Once or twice a month, invite all the food trucks in town to the bricks to provide lunch for the day. Block off a section of the bricks for all the trucks to park. Heavily promote at UNK, the mall, Facebook groups, etc.

I don't know what food trucks are in town and this is a good opportunity to get them some exposure as well as providing some additional food options in downtown Kearney on a regular basis.

Another possible byproduct of this is reliable foot traffic for food truck vendors.
